Spicy Parsnip Soup Recipe

Today we have received 3 deliveries full of gorgeous crafty goodies so we are busy unpacking, pricing and adding to the website, but of course we needed to stop for a filling lunch to get us through the afternoon without snacking on all those naughty things like chocolate biscuits etc. (we do have more than a few cups of tea though!!)
Anyway, for lunch today we had homemade spicy parsnip soup and although I am not a lover of parsnips, I have to say this is really nice, warming and filling. This is so easy to make and can be frozen for upto one month that we though you might like the recipe. The following makes approx 4 small bowls of soup:-
Small squirt of frylight (or use tiny bit of oil or butter) - for softening onion
1 Onion, chopped
2 large parsnips, peeled and chopped into small cubes
750ml of boiling water
1 stock cube
1 clove garlic, finely chopped
2 teaspoons of curry powder
Soften the onion in a saucepan for about 5 minutes until soft then add the parsnips, garlic and curry powder. Fry for a couple more minuites while stirring with a wooden spoon to release all the flavours. Pour the boiling water in a jug and mix with the stock cube. Add to the pan and stir everything well. Simmer for approx. 15 mins until the parsnips are soft and can be easily broken with the back of the wooden spoon. Take off the heat and blend using a hand mixer or food processor. A tablespoon of double cream can be stirred in when serving (although we are being healthy so didn't) and season to taste.
